What's For Dinner

Tonight we're having Ro-Tel chicken, recipe courtesy of Grammy :)

This is my version--I hope you can understand it!
1 whole chicken or 2-3 chicken breasts
1 box thin spaghetti
1 can cream of mushroom soup
1 can ro-tel tomatoes
8-16 oz velveeta cheese (depending on how much cheese you like)

Boil chicken (debone) , then remove and boil spaghetti in the remaining broth.  In a saucepan, mix cubed velveeta and c of mushroom until cheese is melted.  
In a casserole dish, mix all ingredients together and top with extra cheese.  Bake at 350 for 20-30 minutes (until hot and bubbly).

That sounds so good. I love Ro-tel. I use it to make chili and it's great in cheese fondue, but I never tried it on chicken. I'm adding it to my "to do" list!
